We love the taste of fresh avocado. We love delicious feta and most of all we love spaghetti… And now we're going to combine these three wonderful things with a few more delicious ingredients and create super tasty pasta with avocado pesto and feta.

Directions
  • Bring a large pot of well-salted water to a boil.
  • Add the spaghetti to the boiling water and cook until al dente according to package directions.

  • Cut the avocados in half and remove the stone. Using a spoon, scoop out the flesh and place in the beaker of the hand blender.

  • Add the olive oil, lemon juice, garlic and basil to the bowl.
    1 clove garlic, 100 ml olive oil extra virgin, 50 ml lemon juice, 20 g basil
  • Gently blend on low speed with a hand blender until the pesto has a nice creamy consistency. Season to taste with salt and pepper.

  • Drain the feta and cut into small pieces.

  • Drain the finished pasta and then return it to the pot. Turn off the heat, add the avocado pesto and the olives, mix everything thoroughly and let it infuse briefly.

  • Finally, place in deep plates, evenly distribute the pieces of feta and serve fresh.
