Polpette di pesce
The fish balls are lovingly formed from a mixture of fine cod fillet, breadcrumbs, fresh herbs and, of course, Parmesan cheese and then deep-fried until golden brown. Served with tasty Parmesan potatoes, for example, the polpette make a delicious main course. Of course, you can also serve them as a wonderful starter or side dish.

- 700 g cod fillets
- 100 g breadcrumbs
- 70 g parmesan cheese grated
- 10 g parsley
- 2 eggs medium size
- pastry flour (UK: soft / patent)
- sunflower oil for frying

Directions
- First clean the cod fillets, pat dry and remove the skin and bones if necessary. Then cut into large pieces, place in a blender and blend briefly.700 g cod fillets
- Then place the mixed cod in a large bowl and add the breadcrumbs. Wash and finely chop the parsley and add to the bowl.100 g breadcrumbs, 10 g parsley
- Now add the grated Parmesan cheese and eggs to the mixture, season with salt and pepper and mix everything thoroughly until you have a compact mixture that is easy to shape.70 g parmesan cheese, 2 eggs
- Now use your hands to form small balls of about 20g / ยพoz each from the mixture and place on a plate.
- Then put enough flour in a bowl and coat the balls all over in it.pastry flour
- Now heat enough sunflower oil in a pan and fry the polpette for approx. 3-4 minutes at a time until golden brown. Fish out the finished polpette with a slotted spoon and drain briefly on a plate lined with kitchen paper.
